Double chocolate chip muffins are incredibly rich in chocolate flavor, a mouth watering treat which works best for breakfast and snacks as well. They are dome shaped, quite soft and fluffy in texture, leaving every bite amazingly delicious. These muffins can satisfy the small cravings for sweetness at any time of the day and guaranteed to be loved by chocolate lovers because of the chocolate chips inside the batter and on the top. The cocoa infused batter makes it more darker and fudgy, making it perfectly packed with chocolaty goodness in every bite.
Ingredients:
Whole wheat flour – 1 cup
Unsweetened cocoa powder – 1/2 cup
Coconut Sugar or brown sugar – 1/3 cup
Baking powder – 1tsp
Baking Soda – 1/2 tsp
Salt – 1/4 tsp
Unsweetened applesauce – 1/2 cup
Coconut Oil – 1/2 cup
Plain Greek Yogurt – 1/2cup
Milk – 1/2 cup
Eggs -2
Chocolate chips ( for topping)
Instructions:
Preheat the oven:
At first preheat the oven at 350 degree F or 180 degree C and line up a muffin tray with parchment paper or muffin liners or you can dust it with all purpose flour after greasing it with oil.
Mix dry ingredients:
In the second step, take a mixing bowl and add all the dry ingredients which are whole wheat flour, cocoa powder, coconut sugar or brown sugar, baking powder, baking soda and salt.
Combine with wet ingredients:
In a separate bowl, whisk together all the wet ingredients which are coconut oil, plain Greek yogurt, vanilla extract, eggs, milk and unsweetened applesauce. After whisking them, combine with dry ingredients and stir continuously until they are combined well. But do not overmix the batter which will effect the texture of muffins.
Add Chocolate chips and scoop batter:
When the wet and dry ingredients are combined well, add some chocolate chips in the batter. Scoop the batter and fill up the muffin tray up to 3/4th full of the batter. Add some more chocolate chips on the top to make it more chocolaty.
Bake:
Its time to bake the muffins in the preheated oven for around 20 minutes or until the inserted toothpick comes out clean.
Cool:
Let the muffins cool on a cooling rack for around 15 minutes and your delicious, mouth watering muffins are ready to serve, Enjoy!

Mixing bowls: Having different sizes of mixing bowls will make it convenient for you to mix wet and dry ingredients separately.
Whisker: A hand whisker works well when it comes to mixing dry ingredients together.
Electric Whisker: To whisk and gently combine wet ingredients a electric whisker is the best option.
Measuring cups and spoons: To accurately measure the ingredients which is the utmost requirement of baking.
Silicon Spatula: To mix dry and wet ingredients together and to scrap and fold the batter from the sides into the bowl.
Muffin tray: To put the muffin batter which gives them a perfect shape.
Parchment paper or muffin liners: To line up a muffin tray to prevent them from sticking to the tray.
Silicon brush (optional): If you choose to grease your tray with oil using a silicon brush and dust it with flour instead of using a parchment paper.
Scoop: To evenly and equally fill the muffins liners.
Oven: To bake the muffins.
Cooling rack: To cool the muffins evenly from each and every side.
Time required:
Preparation time – 20 minutes
Baking time – 20 minutes
Cooling time – 15 minutes
Total time required – 55 minutes.
Things to remember:
- Do not forget to sift all the dry ingredients before adding to the bowl. It will make the muffins batter lighter and spongy.
- All the ingredients should be at room temperature while using otherwise the texture of the muffins would be affected.
- To get the desired taste and flavor, the batter should be lumps free.
- The measurement of each and every ingredient should be accurate to get the perfect and melt in mouth muffins.
- You can adjust the amount of chocolate chips in the batter and on top according to your taste. It is an additional step to make your muffins rich in chocolate flavor.
Flavoring Ideas:
A number of variations are there which you can bring to elevate the taste of your muffins. Some of them are:
Almond extract: To get a nutty taste, replace the vanilla extract with almond extract.
Orange zest or extract: Adding a small portion of orange zest in the batter or orange extract will give it a bright and zesty contract.
Chocolate shavings: To make it extra chocolaty, add some chocolate shaving on the top of muffins before baking.

How to store?
Short- term storage:
Put the muffins in an airtight jar/container or in a airtight bag. Keep them at room temperature, this way you can store them for around 2-3 days. Avoid keeping them in the direct sunlight it will decrease the rich flavor of muffins.
To prevent them from sogginess, add a paper towel on the bottom of the container and on the top of the muffins. It will help to keep them fresh.
Medium-term storage:
Keep the muffins in an airtight jar or container and place in refrigerator. In refrigerator you can store the muffins for around a week. Instead of airtight jar you can also use zip lock bag.
To make them ready to eat just microwave them for 15 seconds.
Long- term storage:
Wrap each muffins individually using a cling wrap or plastic wrap and place them in freezer. It will prevent their texture and flavor. If you store them this way it increase their timeframe to 3 months.
when you want to eat them. Just let them thaw at room temperature before 1 hour or you can also microwave them for 20 to 30 seconds.
