Blueberry muffins are all time favorite timeless breakfast recipe, combining the flavor of fresh burst of fruits with tender and moist crumb. These muffins are golden brown from the outside and with a soft and fluffy interior. These muffins are quite easy to make and sure to please. Ingredients
All Purpose Flour – 1+1/2cup
Granulated Sugar- 3/4 cup
Vanilla Extract – 1tsp
Vegetable Oil- 1/3 cup
Milk -1/3 cup
Baking Powder -2 tsp
Blueberries Frozen – 1 cup
Large Eggs – 1
Instructions
1. Take a large bowl, mix together all the dry ingredients including all purpose flour, sugar, salt, baking powder. These should be combined perfectly.
2. In a medium bowl beat all together the wet ingredients which involves vegetable oil, egg, milk and vanilla extract. These ingredients should be well blended.
3. Now its time to mix the wet and dry ingredients together. Give them a gentle mix with the use of hand whisker or silicon spatula. The muffins batter should be slightly lumpy i.e. the batter should not be completely mixed.
4. Put the blueberries into the mixture. Give it a gentle mix.
5. Divide the batter completely into the already prepared muffin cups and fill about two third of each cup. you can sprinkle the top of the muffins with the coarse sugar but it is completely optional.
6. Bake the muffins in a preheated oven for 20 minutes at 400 degree F or 200 degree C or bake them until the toothpick comes clean out of the muffins.
7. Let them cool in the baking tray for around 5 minutes after taking them out of the oven.
8. Then transfer them on a cooling rack so that they will be cooled completely.

How to store Blueberry Muffins?
If you want to store the blueberry muffins for a shorter time you can store them in refrigerator for around 2 weeks. All you have to do is store them in an air tight container or you can wrap them individually with the use of a plastic cover. These will keep them fresh but may alter the texture.
For a long term storage, let the muffins cool at room temperature completely. Then wrap them with plastic cling wrap individually to prevent them from the freezer burn. Pack them in a resealable bag or airtight containers and freeze them by using this method you can store the muffins up to 3 months.

Always sieve the dry ingredients.
You should use fresh blueberries to get the fresh flavor.
You can add topping of your choice including coarse sugar, blueberry syrup or blueberry chunks.
Keep the muffins liner tray ready before the batter.
