Ingredients:

Unsalted butter – 1 cup

Brown sugar – 1 cup

Granulated sugar – 1/2 cup

Large eggs – 1

Vanilla extract – 1tsp

All purpose flour – 1+1/2 cup

Baking soda – 1tsp

Ground cinnamon powder – 1tsp

Salt – 1/2 tsp

Chopped nuts – 1 cup (optional)

Instructions:

Dough preparation:

  • Preheat the oven at 350 degree F or 170 degree C.
  • Line up or grease two baking pans and whip together butter, brown sugar and granulated sugar until the mixture become fluffy.

Combine Dry Ingredients:

  • In a large bowl take all the dry ingredients i.e. all purpose flour, cinnamon powder, salt and baking powder whisk them all together with a hand whisker.

  • Now combine the dry ingredients and wet ingredients together and stir them until they are fully combined.

Add oats and nuts:

  • Stir in the oats until they are fully incorporated in the mixture.

  • If you are using any nuts add them with the oats. this step is fully optional according to your taste.

Shape and Bake:

  • Its time to take equal amount of dough and mold them in round shape. Place all the cookies on lined baking trays with some distance.

  • Bake the cookies for around 10-12 minutes in a preheated oven or until the edges become golden brown.

Cool and Serve:

  • Take out the cookies and let them rest for 15-20 minutes on a cooling rack until they are cooled completely.

Notes:

  • Use the butter which is at room temperature. If you use the butter which is chilled it will not combine well with the other ingredients and will result in bad texture of the cookies.
  • Sift all the dry ingredients before preparing the mixture so their would not be any lumps.
  • For a different flavor instead of adding chopped nuts or raisins you can try dried cranberries or coconut.
  • You can customize them according to your taste by bringing variations like adding different kinds of mix-ins.
  • Do not overmix the dough. If you do so it will result in tough cookies.
  • Always watch the baking time. These cookies can go from perfect to overbaked in no time. Therefore baking for the right time in important to get perfect cookies.
  • Its important to use right amount of ingredients. Always level the ingredients with knife before adding. If you just scoop and add the excess ingredients will effect the taste of cookies.
  • You can adjust the amount of cinnamon and chopped nuts according to your taste and preference.

How to store?

Short term storage:

You can store these cookies in an airtight container at room temperature for up to a weak. To prevent them from sticking, add parchment paper or butter paper in between the layer. Avoid to keep them in the direct sunlight, it will spoil the taste of cookies.

Long term storage:

If  you want to store them for a long period of time, Wrap them individually with cling wrap and put in the airtight jar or a freezer-safe bag. This way you can store them for more than a month. When you want to eat, all you have to do is just thaw them on room temperature for around 15-20 minutes and they will get ready to use.
